Gastric juices also contain enzymes such as pepsin, which breaks down proteins into small chains of amino acids called peptides.

What mechanical transformations take place in the stomach?

Contractions of the stomach mix the bolus of food and gastric juices into a highly acidic thick fluid called chyme. Some of the complex nutrients are transformed into simpler ones. The contents of the stomach are continuously emptied into the duodenum.
